Easy Dinner Recipe: Chicken Gyro’s

Ya’ll I love a good gyro. Like, take me back to my middle school days and I thought I was so worldy ordering a chicken gyro from the food truck at the All Saints Carnival. Ha, I still crack up at that memory. I lived for the All Saints Carnival and looked forward to that gyro with tzatziki sauce all year long.

All joking aside, it really was when my love of mediterranean food started. I love it so much and it all started with the gyro and it is still one of my go to’s. Earlier this week I couldn’t figure out what to make for dinner and since it is 8,000 degrees (only a slight exaggeration lol) I knew I wanted something light, fresh and healthy for dinner. It is way too hot for anything heavy and as I was roaming around Pinterest I saw a Chicken Gyro pop up and immediately, yes!

I ran to Publix and grabbed the ingredients to make a quick gyro meal and not only was it super easy to put together but, it was so delicious and I am excited to have leftovers for lunch all week long.

If you love gyro’s or, you are looking to expand your dinner menu I can’t recommend this one enough.

Chicken Gyros //

Ingredients -

Chicken Marinade:

  • 2 pounds boneless skinless chicken breasts

  • 2 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 2 teaspoons smoked paprika

  • 2 teaspoons cumin

  • 2 cloves garlic , minced

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon ground cinnamon

  • 1/8 teaspoon crushed red pepper flakes

Other Items Needed:

  • Pita Bread

  • Tzatziki Sauce (we used regular and spicy)

  • Shredded Iceberg Lettuce

  • 1 cup cherry tomatoes , cut into bite sized pieces

  • 1/2 of a red onion , thinly sliced

  • 1/2 of an cucumber , cut into bite sized pieces

Instructions -

  1. Mix the chicken marinade into a bowl. Add chicken and let sit for a few hours before cooking (at least 1 hour).

  2. Grill your chicken and then cut into bite sized pieces.

  3. Chop your tomatoes, onion and cucumber, set in bowls for easy serving.

  4. Make your gyro by layering

    • Spread your tzatziki sauce on the pita bread

    • Add chicken, tomato, onion and cucumber

  5. Fold in half and enjoy!
