SALAD PASTA
It is no secret that my family loves pasta, we have it for dinner about once a month. Barilla has my favorite GF noodles but sometimes they can be hard to find so I stock up on them when I find them because I know we go through them quick. They are so good that family doesn’t even know they are GF, I mean my husband does but the kids don’t even pay attention and believe me, when something is GF and nasty you can tell quick.
Anyways, I went on a tangent about pasta noodles but what I really came on here to share was a recipe that I tried last night. Since we eat pasta often, I try to switch things up so it doesn’t get blah on us and I found a similar recipe on Pinterest and just created it with the veggies that we like.
So, here is an easy Salad Pasta to whip up for dinner, a potluck, etc! It was so good and so easy.
Ingredients:
1 cucumber
1 green bell pepper
1 red bell pepper
1 red onion
1 zucchini
1 squash
grape tomatoes
1 5oz can olives
16 oz spaghetti noodles
16 oz Italian dressing
2 tsp seasoning of choice (I used Italian and red pepper flakes)
8 oz shredded cheddar cheese (can use vegan if you are DF like me)
*this is what I used but really, you can use any veggies your family likes and it’s a great way to use the produce you already have on hand too
Instructions:
Cook pasta al dente according to the package directions
Chop all veggies into roughly the same bite size pieces
Season veggies with seasoning of choice, mix
Pour dressing over veggies and let marinate while pasta finishes cooking
Once pasta is done drain and add to veggie mix
Combine and add cheese on top
So easy and quick. The best part, there were plenty of leftovers to have for lunch today! 😀
