Recipe: Simple Egg Salad

When the recent hurricanes were making their way to Florida and we were stocking up on food, the first thing I did was take an assessment of everything we had in the fridge and freezer so that we could make meals and snacks with the items that we could lose if we lost power. Thinking about having to throw away food is one of my biggest ick moments in life, thanks to growing up with next to nothing I do not like to waste food and well, when you lose your power that is the first thing that happens.

Anyways, I realized that we had everything to make a simple egg salad so I whipped it up for dinner one night and it reminded me how much I love it and that I need to make it more often. We all enjoyed the freshness of it paired with the croissant but it tastes amazing on any bread with your favorite toppings or as a snack with your favorite crackers or chips!

Simple Egg Salad //

Ingredients Needed:

  • 8 large eggs, hard boiled

  • 1 tablespoon distilled white vinegar

  • 1/2 cup of mayonnaise

  • 1 tablespoon yellow mustard

  • 1/4 cup pickles, diced small

  • Pinch of salt and pepper, to taste

  • Dash of red pepper flakes, if desired

Recipe:

  • Once your eggs are hard boiled (this is my favorite way to hard boil eggs) dice them into small pieces.

  • In a medium sized bowl, combine all ingredients well.

  • Enjoy with crackers or pita chips as a snack.

  • Enjoy as a sandwich on your favorite bread with toppings such as tomato, lettuce, cheese, etc.

  • Store in an airtight container in the fridge for 2-3 days.
