Meal Plan Monday (1.20.25)

Hi friends, happy Monday!

Whew, last week was such a whirlwind. This year has started with a week of vacation, a week of crazy sickness hitting our house and then last week, my car decided to blow up with an overheating engine and I spent half the week unexpectedly researching cars, dealing with repairs and ultimately deciding to buy a new car. Hopefully this week is just a plain ole boring week with no craziness, LOL!

With all the stuff that happened last week with my car, our meal plan ended up going a little haywire. I made about half the meals and I planned for and thankfully they all made more leftovers than I thought so it helped on those busy evenings. I also meal prepped Joe and I lunch for the week and running around dealing with car stuff had my preparations sitting in the fridge so we ate that for dinner one night so we didn’t waste it. Basically, I had a plan but had to be flexible all week long which means I am moving some meals over to this week since I already have the ingredients on hand.

So, this weeks meal plan looks an awful lot similar to last weeks and a little sparse with leftover nights (plus the kids are spending the weekend with their Grandparents so that eliminates some weekend meals) so while it doesn’t seem like a lot to share it is a reminder to make sure that you one, use the ingredients you already bought and have (don’t be afraid to move meals over that you didn’t cook last week - it’ll save time and money) and make sure you look at your week and plan meals around what’s happening in your life. This weekend I know Joe and I would rather go grab a meal out together than cook at home so no need to spend money on dinner groceries that night and instead put that towards something fun — this is my #1 tip in not wasting food or money with meal planning!

Typically I find recipes from my favorite cook books, Pinterest and some of my favorite Instagram accounts - don’t be afraid to find dinner ideas and recipes all over, it will make meal planning easier and more fun!
