Greek Meatballs

We are always on the hunt for easy weeknight dinners over here. With all of my food allergies and our desire to eat healthy, that can sometimes be a challenge since a lot of healthier meals usually require a lot of steps. I found a version of this recipe on Pinterest while searching for dinner ideas and decided to give it a try but with a few tweaks and let me tell you, this has become a family favorite!

It took us less than 30 minutes to make and everyone grabbed seconds it was so good!

Easy Greek Meatballs

Ingredients for meatballs //

  • 2 lbs ground chicken

  • 1/4 cup dill

  • 3-4 cloves garlic

  • 1/2 tsp lemon juice

  • 1/2 tsp oregano

  • 1/2 cup oonion

  • 1/4 tsp pepper

  • 1/2 tsp red pepper flakes

  • 1 tsp salt

Other Ingredients needed for topping and base //

  • cucumber

  • feta cheese

  • grape tomatoes

  • tzatziki sauce (we found a dairy free version)

  • white rice

  • romaine

To make the meatballs, combine all of the ingredients for the meatballs in a bowl and form into meatballs. Use a pan (or air fryer) to fry. Serve over romaine and white rice and then top with desired toppings!
