Crockpot Swiss Cheese Chicken

A couple weeks ago on Instagram I shared that one of my favorite busy mom hacks was using the crockpot/slow cooker. Now, I know that isn’t revolutionary or anything but I do feel like it is an underutilized tool in our kitchen especially on busy nights. When I shared this, I had a number of DM’s asking for recipes and what my to go favorites were and I promised that I would share more on the blog so last night, I documented what we made.

Now, I am not a food blogger so my pictures don’t always look great but believe me, this was delicious! It’s simple to make and only took a few minutes to get it all together. I steamed some broccoli to pair with it and it was the perfect meal!

Crockpot Swiss Cheese Chicken

Ingredients Needed:

  • 6 boneless, skinless chicken breasts

  • 6 slices swiss cheese

  • 1 (10.75 ounce) can cream of chicken soup

  • ¼ cup milk

  • 1 (6 ounce) package chicken stuffing mix

  • ¼ cup butter melted

Instructions:

  • Spray slow cooker with nonstick cooking spray.

  • Place chicken breasts on the bottom of the slow cooker.

  • Cover chicken with slices of Swiss cheese.

  • In a small bowl, combine cream of chicken soup and milk and pour over chicken and cheese.

  • Sprinkle stuffing mix on top and drizzle butter over the top.

  • Cover and cook on low for 4-6 hours or high for 2-3 hours.
