Rice Cake Dessert

Happy Monday ladies!

Coming at you later than usual today in my blog post because the girls are home from school and ya’ll I don’t know why but even with them being nearly 11 and 13, it is still such a distraction to have them home and get all the work things done. Now, it is much easier than when they were toddlers of course but, still hard nonethless.

Anyways, today I thought I would share with you a simple dessert I made the other night that I loved (and had the kids try and they loved too)! I am really trying to cut down on the amount of sugar and junk food I eat but, I have a sweet tooth and crave something sweet and snacky after dinner every night.

In my quest to lose weight and eat healthier, I needed alternatives for dessert and this was delicious and hit the spot without all the guilt.

Chocolate Rice Cake Dessert //

Ingredients:

  • Chocolate Rice Cake

  • Dairy Free Whipped Cream (I used So-Delicious CocoWhip)

  • Strawberries, cut in small pieces

  • Chocolate Chips

How to:

  • Evenly spread desired amount of whipped cream on rice cake

  • Layer with fruit and chocolate chips

  • Enjoy!

I also bough stuff to mix and match this with and next up I can’t wait to try an apple cinnamon rice cake with blueberries!
