Pesto Pasta with Meatballs

I have been on the hunt for easy, quick but healthy weeknight meals. We have become far to quick to grab take out so I have really been making a concentrated effort to have these easy meals at home that we can whip up even when we are tired and not wanting to cook.

Anyways, I was on IG a couple weeks ago and saw this on Just Classically Cassidy’s stories and had to try it. Spoiler alert, it was a huge hit with my family and will definitely be making it’s way into the dinner rotation.

Here is our easy weeknight Pesto Pasta with Meatballs…

Ingredients //

• Box of pasta (we used GF Rotini)
• 1 cucumber diced
• 1 package fresh mozzarella pearls
• 1 bag of precooked meatballs
• Pesto to taste
• Salt and pepper to taste

Instructions //

While cooking your pasta and heating up your meatballs dice up your cucumber.

Then, add your cucumber and mozzarella pearls to a mixing bowl.

When the pasta and meatballs are done add them to the bowl and mix!

Season with salt and pepper, add pesto to taste and mix it up again.

Viola, you are done!

How easy is that? The flavor was incredible and the different textures all blended together so nicely.
