Overnight Oats

Hi friends! Happy Tuesday from my home to yours!

Yesterday on social media I noticed that there was a lot of “this is the Monday-ist Monday” post and I would have to agree. Whew, Monday may have kicked our butts a little with a trip to the ER and a blown out back window but we made the best of it and made it to Tuesday!

Last night I thought to myself, Tuesday cannot go like Monday went so I need to set myself up for success and to start that off was prepping one of my favorites. I am not a huge breakfast eater, I like to drink my coffee and sometime mid-morning get hungry and need to grab for something. If I don’t plan ahead I usually grab for something unhealthy so I try to make something ahead that is easy to grab and this is where overnight oats fit in.

Ya’ll I love overnight oats. It is probably my favorite breakfast and while I have mentioned them a few times, I realized that I never shared them here on the blog. They are so easy and especially for all you busy Mama’s (or even if you aren’t a mom and you are trying to find something quick and easy for the mornings) you should 100% try them. My kids love them too.

There are no less than 10000000 recipes on Pinterest that you can search if you want to get super creative but 9 times out of 10 I stick to my simple tried and true recipe.

So, here goes, my simple “recipe” for overnight oats.

Simple Overnight Oats //

In a mason jar (I use the small or medium ones) combine the following ingredients -

  • 1/2 cup oats (I use GF)

  • 1/2 cup of your favorite fruit cut in small bite size pieces (blueberries, strawberries, banana, whatever you want)

  • 1 tsp vanilla

  • 1 tbsp chia seeds

  • 1 tbsp honey

  • 1 cup almond milk (or milk of your choice)

Once all ingredients are in the mason jar, place the lid on top and set in the fridge overnight. The next morning shake and/or stir to combine and enjoy!

Honestly, I usually just eyeball the measurements too so don’t stress if those are perfect. The best thing about overnight oats is that you literally cannot mess them up!

Pro Tip: Usually I will have a few one night to enjoy for a few days. I find that they last about 3-4 days in the fridge before the oats get too soaked for my liking. Plus by then, I am usually ready for different fruit since I batch make them with the same fruit.
