Meal Plan Monday (8.19.24)

Happy Monday sweet friends!

I definitely have a case of the Monday’s today - I am so tired, moving slower than normal, that afternoon slump has hit me hardcore and well, I am just ready to go to bed and it is only 3pm. Ha! I think the first week of school and the first full week of cheer being the same week has just kicked my butt as we try to reenter our normal routines and well, I am regretting letting myself sleep in all summer long…kind of lol.

Even though I am moving slower, I am still moving along my to do list which includes mapping out my meal plan of the week and sharing with you ladies here on the blog. As always, I use Kroger delivery (I love that it saves me time and money) and I use my cookbooks, Pinterest and just super simple meals to plan out such a busy time of the year.

One thing I have implemented the last couple of months while I meal plan and try to save money is doing 2 leftovers nights and cooking more than normal on the nights I do cook so that we have leftovers. It is saving me money and time and has been a game changer for our family.

I will say last weekend we ate out all weekend, we were exhausted so we did fast food Friday and Saturday night and ugh, my stomach and skin are reminding me why I don’t eat that crap but sometimes, you just need an easy button and we certainly did this weekend. Anyways, lets jump into the meal plan for the week.

Monday - I am just going to make white rice, season some chicken and veggies and call it good.

Tuesday - Good ole’ taco night is as simple as can be

Wednesday - Mix of leftovers from Monday and Tuesday

Thursday - Garlic Parmesan Noodles in the Crockpot

Friday - Leftovers since Thursday’s dinner makes more than the 4 of us can eat

Saturday - We have plans to go to dinner after our first cheer game with friends

Sunday - Italian Meatball Soup (I will make homemade sourdough as well)

Alright friends, that is our super simple meal plan of the week and my weekly reminder that meal planning doesn’t have to be complicated or take long — look at what you have on hand, figure out how much time you have each evening and make it simple and something you can actually cook!
