Meal Plan Monday (2.3.25)

Hi friends, happy Monday!

I will be honest and say that I really struggled with planning meals this week…what a way to come in hot right? Ha!

Honestly, we have a lot going on this week in the evening time and I am not sure when we will be home which makes me want to plan simple meals that can stay frozen (also reads, won’t go bad and have to be thrown away) because there may be nights we end up eating out instead of what was planned. It is just one of those weeks and well, I don’t have to tell you - groceries are expensive and I don’t want to waste them. I am also not really feeling inspired by any meals right now, also normal but still a bummer when you try to meal plan. I want to cook winter meals but we have a high of 85 today so it makes me want to cook summer time meals and none of us are in the mood for them so, we are just rolling with really simple repeat meals that are easy, cheap and won’t go bad if we don’t cook them.

As always, I will link to the recipes that I am using below if you would like to try them. Typically I find recipes from my favorite cook books, Pinterest and some of my favorite Instagram accounts - don’t be afraid to find dinner ideas and recipes all over, it will make meal planning easier and more fun!

I hope that even though I am not feeling very inspired (and am feeling a bit overwhelmed by our schedule) that it inspires you to think through your week, plan the meals you can and push through even when you don’t feel like creating a meal plan. Future you will thank you when you are home and don’t have to order out again because you have some things on hand.

  • Breakfast for Dinner - We are having eggs, pancakes and hash browns (the girls favorite)

  • Burgers - Just your regular ole’ burger and fries

  • Lazy Enchiladas - Recipe linked HERE

  • Honey Chicken with Rice - Ordering the PF Chang’s bags from Kroger, not the healthiest at all but a meal that won’t go bad and gives me peace that I won’t throw anything away and can just move this to next week if needed

  • Super Bowl Snacks - We are a big apps family so on Sunday to watch the Super Bowl we are having family over and will be making all the snacks to pick throughout the evening
