Dinner Recipe: Cowboy Spaghetti
You all know that I love easy dinner recipes that have ingredients that are easy to find! I love to cook but I don’t want it to be fussy or feel like a chore, I want to enjoy what I am cooking and not have to run in circles to pull it together.
Lately, I have been in kind of a meal slump with our usual, go to meals so I have been on the hunt for new recipes and after finding a few recipes for Cowboy Spaghetti on Pinterest, I knew I had to try it.
Not only was it delicious the night that I made it but, dare I say that it was even better the next day as leftovers. In a season where we aren’t home a lot in the evenings, having delicious leftovers is such a win at dinnertime and let me tell you this did not disappoint - my daughter had 4 plates the first night!
I took inspiration from a few different recipes but here is what I came up with that we loved.
Cowboy Spaghetti //
Ingredients Needed:
1 lb spaghetti
1 tbsp olive oil
1 package bacon, cooked and chopped
1 lb lean ground beef
1 medium onion, chopped
3 cloves garlic, minced
15 oz can crushed fire-roasted tomatoes
8 oz can tomato sauce
1/2 cup beef broth (you could also use chicken broth if you already have that on hand)
1 tbsp Worcestershire sauce
1 tbsp hot red pepper flakes, optional if you like spice
Salt and pepper to taste
8 oz shredded cheddar cheese
green onions, chopped
Instructions To Make:
Cook your bacon to your preferred taste (you can fry it, bake it or air fry it to your desired crunch). Once cooked, set aside.
Cook the onions until tender. Then add the beef and cook until browned. Add in the garlic and cook until fragrant.
Next, add the tomatoes, tomato sauce, beef (or chicken) broth, Worcestershire sauce, red pepper flakes, salt, and pepper.
Stir well, reduce the heat to low, and leave to simmer for 10 minutes, stirring occasionally.
While the sauce simmers, cook the spaghetti in a pot of well-salted water. Cook to al dente per the package instructions, then drain.
To serve, add noodles to the plate and add sauce on top.
Serve cowboy spaghetti with shredded cheese, crispy bacon and green onions on top.
